Rebecca Rather, Chef + Co-Owner 

Rebecca Rather, known in the culinary world as "The Pastry Queen,"is an American pastry chef, restaurateur, and cookbook author from Beaumont, Texas. best known for her bakery café, The Rather Sweet Bakery, which was located in the Texas Hill Country.  Before she reached international acclaim, Rather headed the bakery side for Houston restaurateur Tony Vallone at Tony's, La Griglia and Grotto in Houston.  She then moved to upstate New York to study artisanal breads with Dan Leader. She returned to Texas to oversee the pastry side of Bread Alone Bakery. Aside from her commercial work, Rather has also taught baking classes at Houston's Central Market and Sur La Table. Rather is the author of three best-selling and award-winning cookbooks, including a winner of the Julia Child Cookbook Award. 


Paula Kaiser, General Manager 

Paula's cool and kind spirit keep things running smoothly at Emma + Ollie.  She is the glue that keeps everyone working together by always making those around her feel seen. Paula co-runs the highly successful building contract business, Kaiser and Company.  Paula has also had varied management, and work experience as a journalist, which lends itself to her strong communication skills.    


Leigh Lacy, Front of The House Manager 

Leigh moved to Fredericksburg seventeen years ago and brings her years of service and hospitality experience working to Emma + Ollie. She is thrilled to be part of the team creating something that the community is excited to have again...a place with a cozy atmosphere, friendly people, and outstanding & delicious food that will nourish one's soul.


Kathryn  Harrison, Owner 

Kathy's whimsical and creative personality is deeply embedded in the Emma + Ollie brand.  Named partly after her great-grandmother, Ollie (as well as Kathy's beloved canine companion), who shared a similar zest for life!  Her family has been a part of the Fredericksburg for many years, and thus she deeply cares to serve the community with a place to gather and eat well.  Kathy is an amateur astronomer, animal lover, and philanthropist.
